Wine-Making Method

"Il Mattaglio" is obtained from a selection of the best Pinot Noir and Chardonnay grapes entirely gathered by manual harvesting. The grapes are carefully handled in order to prevent them from crushing during transportation to the winery. A soft pressing activity ensures that only the very best of the juice undergoes fermentation in controlled temperature stainless steel tanks. After resting at least six months, the wine receives selected yeasts prior to being bottled. The wine is subject to a secondary fermentation, according to the traditional classic method. The bottles are stored for over 24 months in order for the yeasts to confer a mature and complex taste to the "Mattaglio" wine. It then undergoes the disgorgement and the addition of liqueur d'expédition (dosage).


Golden reflections and persistent graceful fine bubbles make this sparkling wine uniquely elegant.Citric notes can be immediately perceived and yellow pulp fruits revealing a complex body of multi-layered aromas. Fresh and sophisticated on the palate, its flavour persists thanks to its distinctive balance of acidity and velvet finish. Its sensual color and delicate taste combine in sublime harmony
