"Il Mattaglio" Dosage Zéro is obtained from a selection of the best Pinot and Chardonnay grapes entirely gathered in small cases (17 kg. max) by manual harvesting.
The grapes are carefully handled in order to prevent them from crushing.
A gentle pressing activity ensures that only the very best of the juice undergoes fermentation in controlled temperature stainless steel tanks.
After resting at least six months, the wine receives selected yeasts prior to being bottled.
Once the re-fermentation process is completed, the bottles are stored for over 24 months for a long maturation which confers a complex taste to the wine. Then disgorgement is carried out without the addition of liqueur d' expédition but simply adding the same wine up to the requested level.


Brillant as a diamond. Pale yellow color with greenish hints. Structure of subtle grain made of tiny fine bubbles. Softly perceptible nose, refined with pleasant notes of white flowers.
Fresh and dry palate balanced by good salinity level. Gifted by a rather persistent closing of pure elegance.
Alcohol strength: 12,5% vol
To be served at 8°C
