Single variety wine-making of Lambrusco di Sorbara grapes grown in Secchia river alluvial plain, in the heart of Emilia Romagna region.

Wine-making method

It is obtained from a selection of the best Sorbara grapes entirely gathered in small cases (17 kg. max) by manual harvesting. The grapes are carefully handled in order to prevent them from crushing during transportation to the winery. The soft pressing activity respects serious batching criteria. The must is submitted to clarification followed by alcoholic fermentation into controlled temperature stainless steel tanks. After remaining at least six months inside the tanks for maturation process, the wine receives selected yeasts, prior to being bottled.
The bottles are then stored horizontally in piles for the re-fermentation process in ambient temperature constantly kept at 12°C. The following steps are remuage, disgorgement and liqueur d’expédition dosage.


This Lambrusco has a pale bright ruby colour with light copper shades and high limpidity. Perlage is smooth and well combined. Delightful, compact and distinguished scents of mixed wild berries can be noted at the nose, with clear hints of wild strawberries. The palate perceives an immediate fresh note enhanced by shades of red fruits, with a prevailing note of sour cherries.
The acidity is good and well balanced.
