Wine-making method

Lambrusco di Modena Spumante D.O.C. is obtained from a selection of the best Sorbara grapes entirely gathered in small cases (17 kg. max) by manual harvesting. The soft pressing activity respects serious batching criteria. The must is submitted to clarification followed by alcoholic fermentation into controlled temperature stainless steel tanks. After remaining at least six months inside the tanks for maturation process, the wine receives selected yeasts, prior to being bottledThe bottles are then stored horizontally in piles for the refinement process at constant temperature of 12°C. The following steps are remuage, disgorgement and liqueur d’expédition dosage.


Ruby red colour with purplish foam. Clear and bright, with tiny and persistent perlage.
Nose: scent of blooming rose and raspberry pulp, combined with hints of cherries and sour cherries. The palate perceives a clear blend of redberries, with a prevailing tone of wild strawberry. Long finish with good persistence. Well balanced and clean closure.

Alcohol Strenght: 12,5 % vol.
To be served at 8-10°C.
