Wine-making method

Our Lambrusco di Modena Spumante D.O.C. is obtained from a selection of Sorbara grapes entirely gathered by manual harvesting.
The crushing activity respects serious batching criteria. The must undergoes clarification followed by alcoholic fermentation under controlled temperature into stainless steel tanks. After resting at least six months, the wine receives selected yeasts for the secondary fermentation, prior to being bottled.
The bottles are then stored horizontally for the re- fermentation process in a constant ambient temperature of 12°C, for at least 24 months.
The following steps are remuage, disgorgement and liqueur d’expédition addition.

Description

This Lambrusco has a bright ruby color and high limpidity. Smooth, continuous and well combined perlage. Delightful, compact and distinguished red berries scents can be noted at the nose, with hints of wild strawberries.
The acidity is nice and well balanced.
The ending is persistent and pleasantly clean.
Alcohol strength: 13% vol
To be served at 8°C
